An email signature puts your brand on your correspondence, and — when you include your contact information — makes it easy for people to reach you. Creating and using a signature in Microsoft Outlook is easy. Outlook, however, only adds a signature to new email messages. If you want to add a signature to messages that you've replied to or forwarded, change the Outlook settings.

How to Use a Special Signature for Replies in Outlook
If you want to automatically append your signature to replies or to messages you are forwarding, edit the Outlook options.
The signature attached to your emails can be customized to reflect your personal tastes, your company logo, or a particular mood. Signatures can contain text, links, and pictures; for example, you can create a signature for a business email that includes your name, job title, phone number,. Tried remote logging into the Windows Machine and copying/pasting that code which worked in #3, and pasting to the Outlook Signature box on the Mac machine. It did not copy the images, only the text. Failed again. Often times you will need to copy and paste text into an email from various sources. By default Outlook keeps the formatting of whatever it is that you are pasting instead of the formatting of.
If you want to use a new signature for replies and forwards in Outlook, create the email signature before you begin.
In the Outlook Options dialog box, select the Mail tab.
In the Compose messages section, select Signatures.
In the Signatures and Stationery dialog box, select the Replies/forwards dropdown arrow.
Choose the signature you want to add to messages you reply to or forward to other recipients.
Select OK to apply the changes and close the Signatures and Stationery dialog box.
Select OK to close the Outlook Options dialog box.
Use a Special Signature for a Single Reply or Forward
You do not have to establish a default signature for all replies and forwarded email messages. Instead, you can opt to add a signature manually as needed.
Open the email message you want to reply to or forward and select Reply or Forward to open a new message window.
Select Signature in the Include group and then choose Signatures from the drop-down list. The Signatures and Stationery dialog box will open.
Select your signature in the Select Signature to Edit box. If you have more than one signature, you can select any of the signatures listed.
Select OK. The signature will appear in your reply or forwarded message.
Is it possible to have Outlook pick a signature to use based on the email style formatting (HTML or Plain Text)?
For example if it was HTML the company logo will show, if it isn't the company name will be written in plain text.
Or maybe force all emails to be sent as HTML?

When you create a signature in Outlook, it actually creates three - one for HTML, one for rich text, and one for plain text.
You can edit these files directly by navigating to %APPDATA%MicrosoftSignatures. (Paste this into the address bar of Windows Explorer, or go to Start > Run, and paste there and click ok).
I don't recommend editing the HTML one unless you know what you are doing. Create the signature first in Outlook, then just leave the HTML one as is. But you can open the .txt ones with Notepad and the .rtf ones with Word and edit them.
